The Dome Sauvignon Blanc 2024

The pungent tropical fruit flavours of ripe figs, Cape gooseberry and passion fruit supported by a fresh crispness along with a mineral character and a complex and long fruity finish on the palate.

WINE INFORMATION Cultivar: 100% Sauvignon Blanc Wood: 62.3% of this wine was made from grapes that were frozen for a few weeks (cryoextraction) and then defrosted, pressed, and fermented during the autumn. 22.8% of this component was fermented and aged in erracotta amphorae. 40% of the wine was fermented in old 600-liter and 300-litre French oak barrels and aged for 11 months before it was blended back with the tank fermented components. 37.2% were fermented and aged in stainless steel before it was blended back with the wood and amphora components.
