WINE INFORMATION Cultivar: 86% Chardonnay, 14% Pinot noir Wood: The wine underwent malolactic fermentation and spent a further 8 months in tank on its primary lees before it was sweetened again and inoculated for the fermentation in bottle. 9% of the wine was transferred to 205 liter French oak barrels halfway during fermentation and aged for 6 months. The wine spent 117 months on its lees in bottle before it was riddled and disgorged on 9 April 2025. No sugar was added to the wine during disgorging, thus making it a Brut Zero. Bottles produced: 1000 bottles
MATURATION POTENTIAL This vintage can be enjoyed up to 2035 but will reach its best drinking potential towards the end of 2028 onwards.
TASTING NOTЕ The natural beauty and fine bubbles enhances the iodine-like minerality that reminds you of fresh seaweeds and crushed oyster shells, complimented with a rich biscuity allure and ladylike elegance. Yeasty flavours of freshly baked bread, lemon cream and hints of Granny Smith and Pink Lady apples attached to her fine elegant bubbles that fill the air. The fine mousse on the pallet caries hints of citrus, pineapple and grapefruit and finishes in a rich and creamy aftertaste.
